3,5 very ripe bananas
1/2 cup applesauce
2 eggs
1 teaspoon vanilla extract
3/4 cup water
2,5 cups whole-wheat flour
2 teaspoons of baking soda
2 teaspoons of baking powder
1 tablespoon cinnamon
2 tablespoons of shredded coconut
1 tablespoon olive oil for the pan
whole-wheat flour for the pan
Optional:
put 3 tablespoons of dark brown caster suger to the mixture
How to make it:
1. preheat the oven on 175 degrees celsius
2. With a hand mixer, beat together the banana, apple sauce, vanilla and water until its creamy
3. In an other bowl, sift flour, baking soda, baking powder, and spices.
Add dry mixture in to the wet ingredients, beating it well.
4. Oil the loaf pan and put some flour in it.
5. bake for at least 45 minutes in the middle of the oven, test if the bread is ready by inserting a toothpick and look if it comes out clean.
6. Cool it for 10 minutes, take it our of the pan and put it on a rack to cool it down
7. When it is completely cool, you can slice it and have a healthy lovely breakfast!!!
